Did you know that a handful of almonds (about 23 nuts or one ounce) contains high amounts of protein, fiber, monounsaturated fat, vitamin E, calcium and other important minerals, and phytochemicals that may help protect against many common diseases including heart disease, diabetes and celiac disease.
Almonds are an excellent source of vitamin E, magnesium, and manganese; they are a good source fiber, copper, phosphorous and riboflavin. When compared ounce for ounce, almonds are the nut highest in protein (6g), fiber, calcium (75 mg), vitamin E, riboflavin and niacin (1mg).
I am doing this review because I received two (2) containers of the new Bold Sriracha Flavored Almonds as part of a campaign for Blue Diamond Almonds.
What is Sriracha? I had never heard of it until recently and now I see it in all sorts of recipes. Sriracha is a spicy sauce made with red chili and garlic, served especially with Vietnamese and Thai cuisine. The general recipe for sriracha includes ground chiles, vinegar, garlic, sugar, and salt, and was first developed to serve with seafood.
I tried the Sriracha Almonds, not sure what to expect, I knew that it would be a spicy and bold flavor but was pleasantly surprised that when I tried them, I actually liked this new flavor. I generally don't like real spicy foods but these nuts were a bit sweet and definitely had the Sriracha flavor, but were definitely flavorful and really good. So with that said I want to share a recipe with you using Blue Diamond Bold Sriracha Flavored Almonds.
Almond and Lemon Encrusted Fish Recipe
INGREDIENTS
- Zest and juice of 1 lemon, divided
- 1/2 cup Sriracha flavored almonds, coarsely chopped (use a food processor)
- 1 tablespoon finely chopped fresh dill or 1 teaspoon dried
- 1 tablespoon plus 2 teaspoons extra-virgin olive oil, divided
- 1 teaspoon kosher salt, divided
- Freshly ground pepper to taste
- 1 1/4 pounds cod or halibut, cut into 4 portions
- 4 teaspoons Dijon mustard
- 2 cloves garlic, slivered
- 1 pound baby spinach
- Lemon wedges for garnish
PREPARATION
- Preheat oven to 400°F. Coat a rimmed baking sheet with cooking spray
- Combine lemon zest, almonds, dill, 1 tablespoon oil, 1/2 teaspoon salt and pepper in a small bowl. Place fish on the prepared baking sheet and spread each portion with 1 teaspoon mustard. Divide the almond mixture among the portions, pressing it onto the mustard.
- Bake the fish until opaque in the center, about 7 to 9 minutes, depending on thickness.
