My Thoughts
This book is interesting in that you do not have to be a vegetarian to enjoy these recipes. I am not a vegan by any means and I will be trying a lot of the recipes in this book. I am on a diet and I am not real crazy about meats, I will eat chicken, fish, turkey and pork, not a big beef eater. On the other hand this cookbook is perfect for vegetarians.
A vegetarian or vegan do not eat meat, fish, poultry, eggs or dairy. They also are known to eat their foods raw. Being a vegetarian is not only to lose or maintain weight. It is a lifestyle and author Jonathan Vine does a nice job explaining what a vegetarian is and why people become vegan. There are many health benefits of going vegan, lower risk for heart disease, diabetes, obesity and many other reasons.
A vegetarian has to be careful to see that they are getting enough nutrients, and of course fruits and vegetables have proteins, fiber, minerals and lots of antioxidants. To be a successful vegan, you must make sure that you get the right amount of proteins, calcium, vitamin D, Iron and vitamin B-12. Other benefits include detoxing your body and mind, weight control; there is a reduced amount of sugar and fat when you eat vegan. Strong bones, relief from allergies, you get a lot more energy and of course you are being a part of not killing animals for food.
As I was going through the recipes I did find a lot of appealing ones that I will be trying, there are recipes for breakfast such as the Spiced Breakfast Pudding, which has barley, bulgar, rolled oats, it uses almond milk for the milk substitute, which I like along with soy milk. The next section, after recipes for busy moms, is quick and easy recipes for romantic meals. Pesto Omelet, tomato and basil sauce pasta, and the Spinach and Strawberry Balsamic Salad looks sounds very appealing. There is a section of recipes that kids can make, fast and easy recipes for parties,
Excellent pictures and easy directions make this cookbook perfect. Something for everyone to eat. I like that, there are recipes in this cookbook that I will be trying, hubby is a meat and potatoes kind of guy but after his bout with cancer he is agreeable to eat more fruits and veggies into his diet. More so now than he ever did before. So I will be making some of these recipes for us.
