  1. Oatmeal Coconut Chocolate Chip Cookies

These are my go-to cookies because they are healthy-ish and soft. I like that the coconut gives them

a twist.

  1. Vegetable Lasagna

I just love cheese, tomato sauce and pasta, but sometimes I’m too lazy to make a bechamel sauce

(the yummy white sauce) so instead I use mayo and mix it with sautéed mushrooms.

  1. Banana Bread

I like to think of this as a healthy treat. I add quick oats to make it healthier. I also make sure that

the bananas I am using are extra ripe.

  1. Vegetable Dumplings

I suggest that you cook your dumpling filling slightly. Don’t cook it all the way, and make sure to

add a little toasted sesame oil to it.

  1. Dessert Pizza

I love regular pizza, but if you have an already baked pizza crust this is pretty delicious. Spread

Nutella like you would tomato sauce and then add white chocolate pieces and some

strawberries on top. Finish it all off by dusting it with powdered sugar.

  1. Mexican Lasagna

I love to make casserole style dishes. This one uses tortillas instead of lasagna sheets

and beans with salsa instead of pasta sauce, but it still manages to have the delicious

combo of tomatoes and cheese.

  1. Veggie burger

If you are ordering in a restaurant, ask them if they can make you some caramelized

onions. They add a sweetness to the burger. You can also make your own spicy pink

sauce by combining hot sauce, ketchup, mayo and pepper. It may sound weird, but

nothing beats a veggie burger with a kick.

  1. Berries and Pear Crumble

I love to make this because it is really simple and delicious. You might have noticed

that I have an affinity for oats. Before you bake add little pieces of butter to the top to

make the crust moist.

  1. Lo Mein

Another easy meal that I love to make for my family. The trick is to stir fry all the

ingredients separately with the seasoning before pan tossing them with the noodles.

  1. Chocolate Almond Croissants 

I love eating almond croissants, but I thought it would be fun to add chocolate to them.

They really come out delicious. Most people say to eat them at room temperature, but

I like mine warm, so the chocolate is a little melted.
