About Melissa Bourbon

Several years ago, I was invited to attend The California Strawberry Commission’s fabulous blogger event in Dallas.
One of the things on their menu was Mahi Mahi tacos (straight from the California strawberry cookbook).
There is a scene in The Secret on Rum Runner’s Lane which takes place in the fish market. All that fish had me thinking of fish recipes. This one is my absolute favorite. I am simply in love with Mahi Mahi tacos.
There are things that make these tacos so delicious:
• The blackened fish
• The Chipotle Avocado Sour Cream
• The Strawberry Salsa
First, the fish. It’s seasoned with cumin, paprika, oregano, salt and pepper. You dredge the fish in the blackening spices, then pan grill them.
Next, Chipotle Avocado Sour Cream. This just entails sour cream, chopped up avocado, and a teaspoon of chipotle chili in adobo sauce (comes in a can in the International/Mexican food section of your market). Mash it all together or blend in a blender to a smooth consistency.
The Strawberry salsa is made up of chopped red onion, strawberries, mango, papaya (I use frozen mango and papaya), pineapple (optional), and cilantro. It's a sweet salsa, and my absolute favorite thing. Extra cilantro on my portion. The red onion and cilantro with the fruit is the perfect combination.

Mahi Mahi Tacos with Strawberry Salsa and Avocado crema
4 Mahi Mahi pieces, patted dry with a paper towel
Blackening spices (1 1/2 tsp paprika, 1 tsp cumin, 1 tsp dried oregano, salt, and pepper. Add ground chili powder, if you like)
Dredge the Mahi Mahi pieces in the blackening spices. Spray olive oil into a large frying pan or grill pan. Preheat.
Lay the Mahi Mahi pieces in the pan. You should get a nice sizzle. Cook for a few minutes on each side, taking care not to overcook. Fish should be flaky.
For the Strawberry Salsa
1 cup strawberries, diced
1/2 cup mango and/or papaya, dice
1/2 cup pineapple, diced
1/2 cup red onion, diced
1/4 cup chopped cilantro
Mix together. Adjust different fruits and onion to taste.
Avocado Crema
1 avocado
1 cup sour cream
1/4 chopped cilantro
Mash or blend together in a blender. Add buttermilk or more sour cream to adjust the consistency of the sauce.
