Mushroom Palmiers
Makes 40
2 tablespoons/30 grams unsalted butter
¾ pound/340 grams fresh mushrooms (white or brown) chopped
2 medium shallots, finely chopped
1 teaspoon fresh thyme, minced
¾ teaspoon lemon juice
¾ teaspoon hot sauce (I use Frank’s)
¼ teaspoon salt
1 pack frozen puff pastry (two sheets), thawed
1 large egg
2 teaspoons water
Preheat the oven to 400°F/200°C.
In a large skillet, melt the butter over medium heat. Add mushrooms and shallots and cook, stirring, until tender. Stir in thyme, lemon juice, hot sauce, and salt. Remove from the heat and allow to cool completely.
Unfold one pastry sheet and place it on a greased or parchment-lined baking sheet.
Place half the mushroom mixture in the middle of the pastry and spread to within ½ inch/1.25 cm of the edges. Roll up both sides, width-wise, until the rolls meet in the middle. Repeat with the second puff pastry sheet and mushrooms.
Cut both rolled pastry sheets into approximately 20 slices.
In a small bowl, whisk egg and water. Brush over pastries.
Bake for 15–20 minutes or until puffed and golden brown.
Serve warm or at room temperature.

Why does this remind me of the Clint Eastwood movie where he is wounded during the Civil War and those nice female students feed him poisoned mushrooms?
