But what should be a simple investigation morphs into something deadly. The deeper Corrie digs, the more bizarre clues are revealed, and a possible witness is found dead. As tempers rise, it's up to Corrie to catch a killer... who's about to strike again.

Recipe Guest Post – Taco Bar

My heroine, Corrie Locke, is a lawyer with sweet P.I. skills, thanks to her late great P.I. dad. Skills that Corrie’s mother, Victoria, vehemently disapproved of…until GAMBLING WITH MURDER, book #5 in my Southern California Mysteries. Victoria played a big role in solving the crime in that book and now, she’s singing a different tune about her daughter’s case-cracking. Victoria is not only very enthusiastic about joining her daughter in investigating, she invites herself along…often. Too often, if you ask Corrie. 

Victoria is a gourmet cook, who, in my latest book, MURDEROUS MEANS, makes herself useful by both making dinner for the questionable Means family and by snooping around their house. Corrie can’t complain. Her mother’s cooking is fabulous, and she’s got a way of making people talk. I can’t divulge how she makes them talk, but I can share a recipe.  Victoria serves up a taco bar for the Means family one night and here is her most popular taco recipe:

Chicken Tacos

Ingredients

1.5 pounds boneless skinless chicken thighs, trimmed of fat

1 medium yellow onion sliced thinly or diced

2 garlic cloves, minced

¼ cup of chicken broth

1-2 T avocado oil

1 T. cumin

1 T. chili powder

1 T. paprika

1 t. salt

½ t black pepper

Suggested toppings: avocado or guacamole, jalapenos, pico de gallo*, cilantro

12 Corn or flour tortillas (warmed) or serve in butter lettuce cups

In a small bowl, mix spices and season chicken with the mixture. Heat avocado oil in a pot or large cast iron skillet over medium high heat. 

Add onion and cook for three minutes. Add garlic and cook for 1-2 more minutes, until onion is translucent. 

Add chicken in a single layer (in batches, if needed) and cook for two minutes on each side. Add all the chicken and the broth, and cover. Cook for thirty minutes on simmer. Add more broth if needed.

Remove the chicken and shred and serve.  

Easy Peasy Pico de Gallo topping

1 medium tomato, cut into chunks

¼ medium red onion, sliced

1 T chopped fresh cilantro

2 garlic cloves

½ small jalapeno pepper, seeded

½ t. salt

Place ingredients in a food processor and pulse a few times or finely chop ingredients by hand and gently mix in a bowl.
