Pearl’s Kickin’ Beans

Serves 8-10

Pearl’s Kickin’ Beans - Cayman Conundrum

Ingredients:

Two 15 ounce cans of ranch style beans (with juice)

1 teaspoon scotch bonnet pepper sauce

1/2 teaspoon powdered garlic

Two slices hickory smoked bacon

Salt and pepper to taste


In a large saucepan, combine the above ingredients. Cover and heat on medium heat for fifteen to twenty minutes. 

Liz’s Mango Margaritas

Serves 4

Liz’s Mango Margaritas - Cayman Conundrum

Ingredients:

2-3 ripe mangos chopped into cubes

2-3 tablespoons agave syrup

½ cup Blanco Tequila

¼ cup lime juice

2 tablespoons Cointreau

A pinch of salt

3 cups ice


Puree mango in blender. Add remaining ingredients and blend on high until smooth.

Liz’s Roasted Veggies

Serves 8-10

Liz’s Roasted Veggies - Cayman Conundrum

Ingredients:

4 carrots

1 head of cauliflower

1 head of broccoli

Coconut oil

Juice from one lime

Preheat oven to 450 degrees. Peel and slice carrots into ¼ inch rounds. Trim and cut broccoli and cauliflower into bite sized pieces. Place cut vegetables in a roasting pan and toss with a generous drizzle of coconut oil. Season with salt and pepper. Roast for twenty minutes or until veggies are lightly browned and tender. Toss with lime juice and serve.

Ida’s Key Lime Cookies

Makes two dozen cookies

Ida’s Key Lime Cookies - Cayman Conundrum

Ingredients:

1 ½ cups of flour

½ teaspoon baking powder

¼ teaspoon baking soda

¼ teaspoon sea salt

3 tablespoons freshly grated lime zest

1 cup sugar

1 teaspoon vanilla

1 stick softened butter

2 tablespoons plain Greek yogurt

4 teaspoons lime juice

Preheat oven to 350 degrees. In a bowl, whisk flour, baking soda, baking powder, and sea salt together. In a separate mixing bowl, add sugar and lime zest. Add softened butter to the sugar mixture and whisk until light and airy. Add yogurt, vanilla, and lime juice. Fold in the flour mixture. Place the cookie dough in the fridge for at least fifteen minutes. Form the dough into small balls. Place on a greased cookie sheet leaving at least two inches of space between each cookie. Bake for twelve minutes or until crispy at the edges and then let the cookies sit for five minutes before serving.
