Almond Breeze Almond Milk Original Review with Chocolate Cake Recipe


I am doing a review today of Blue Diamond Almond Breeze Original with 30 calories. I was sent two (2) 32 oz containers as part of the Almond Breeze campaign from Blue Diamond Almonds. 

Almond milk has so many benefits, it doesn't impact sugar levels, which is great for me as including it in my daily diet as I am diabetic and need to really watch my sugar levels. Almond milk helps the digestion as it has no lactose in it. Almond milk helps in healing and muscle strength and it does not need refrigeration so it is easy to take along to work, on picnics etc. 

I have been dieting for awhile now and have done some other lifestyle changes and one of the changes is using almond milk for drinking and baking. In baking where the recipe calls for milk, I substitute almond milk and at 30 calories per serving you can't go wrong. It can cut the caloric count drastically as in the chocolate cake recipe below. I love chocolate and want to be able to have a piece of cake once in awhile without the guilt, well almost no guilt..lol. Seriously if you are looking for great taste in a non dairy milk, give Almond Breeze Original Almond Milk a try. It also comes in chocolate and vanilla flavors so you do have a variety.  

Nummy Chocolate Cake!



Ingredients: 

1 cup Almond Breeze Almond Milk Original
 
1 teaspoon apple cider vinegar
3/4 cup granulated sugar
1/3 cup canola oil
1 teaspoon vanilla extract
1/2 teaspoon almond extract 

1 cup all-purpose flour
1/3 cup cocoa powder, Dutch-processed (I like to use Dark Cocoa powder)
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Preheat oven to 350F

Mix together wet ingredients in a large bowl.
Mix all dry ingredients together in another bowl. 
Using a hand mixer slowly add dry ingredients into wet ingredients.

Lightly grease an 8 inch springform pan. Pour in the batter and bake for 25-30 minutes, until a toothpick inserted through the center comes out clean.

Ganache
2/3 cup Almond Breeze Almond Milk Original
8 oz dark chocolate chips
Sprinkle slivered almonds on top if desired

In a small saucepan bring milk to a boil, then turn heat down to simmer. Add the chocolate chips and mix until melted. Stir until everything is smooth and well incorporated. Set aside and let cool for until the cake is done.

Place the cake on a cake stand and pour the ganache over the cake smoothing it all around until the ganache is everywhere.

Blue Diamond Almonds Bold Sriracha Flavored Almonds Review #ad



Did you know that a handful of almonds (about 23 nuts or one ounce) contains high amounts of protein, fiber, monounsaturated fat, vitamin E, calcium and other important minerals, and phytochemicals that may help protect against many common diseases including heart disease, diabetes and celiac disease. 

Almonds are an excellent source of vitamin E, magnesium, and manganese; they are a good source fiber, copper, phosphorous and riboflavin. When compared ounce for ounce, almonds are the nut highest in protein (6g), fiber, calcium (75 mg), vitamin E, riboflavin and niacin (1mg). 

I am doing this review because I received two (2) containers of the new Bold Sriracha Flavored Almonds as part of a campaign for Blue Diamond Almonds. 

What is Sriracha? I had never heard of it until recently and now I see it in all sorts of recipes. Sriracha is a spicy sauce made with red chili and garlic, served especially with Vietnamese and Thai cuisine. The general recipe for sriracha includes ground chiles, vinegar, garlic, sugar, and salt, and was first developed to serve with seafood. 

I tried the Sriracha Almonds, not sure what to expect, I knew that it would be a spicy and bold flavor but was pleasantly surprised that when I tried them, I actually liked this new flavor. I generally don't like real spicy foods but these nuts were a bit sweet and definitely had the Sriracha flavor, but were definitely flavorful and really good. So with that said I want to share a recipe with you using Blue Diamond Bold Sriracha Flavored Almonds.





Almond and Lemon Encrusted Fish Recipe

INGREDIENTS


  • Zest and juice of 1 lemon, divided
  • 1/2 cup Sriracha flavored almonds, coarsely chopped (use a food processor)
  • 1 tablespoon finely chopped fresh dill or 1 teaspoon dried
  • 1 tablespoon plus 2 teaspoons extra-virgin olive oil, divided
  • 1 teaspoon kosher salt, divided
  • Freshly ground pepper to taste
  • 1 1/4 pounds cod or halibut, cut into 4 portions
  • 4 teaspoons Dijon mustard
  • 2 cloves garlic, slivered
  • 1 pound baby spinach
  • Lemon wedges for garnish


PREPARATION


  1. Preheat oven to 400°F. Coat a rimmed baking sheet with cooking spray
  2. Combine lemon zest, almonds, dill, 1 tablespoon oil, 1/2 teaspoon salt and pepper in a small bowl. Place fish on the prepared baking sheet and spread each portion with 1 teaspoon mustard. Divide the almond mixture among the portions, pressing it onto the mustard.
  3. Bake the fish until opaque in the center, about 7 to 9 minutes, depending on thickness.

About the Author
Eileen Enwright Hodgetts is a much traveled writer. Brought up in England and Wales, she has also lived and worked in South Africa and Uganda. Eileen and her husband, Graham, now make their home in the USA. Eileen’s life experiences allow her to use exotic backgrounds for her novels and to understand how an adventure can begin with just one small incident. For ten years she directed a humanitarian mission in East Africa as an employee of Christ Church at Grove Farm in Sewickley, PA. and her whole family continues to be involved in Uganda through the Ugandan Gold Coffee project bringing coffee to the United States and returning the profits to Uganda to be used for drilling water wells.  Much of her writing reveals not only her great fondness for the British Isles, but also her British sense of humor which still sees the funny side of most situations.

In addition to writing novels, Eileen Enwright Hodgetts is also an accomplished playwright with a number of national awards to her credit. Her novel, Whirlpool, began life as a stage musical about a free-spirited woman and her desire to go over Niagara Falls in a barrel. The musical played at the Niagara Falls Convention Center in Niagara Falls, New York. In 1993 the Mayor of Niagara Falls, NY, proclaimed the summer of 1993 as Whirlpool Theater Days in honor of the production.

Susan Peterson Wisnewski is an indie author from the northeast. She writes thrillers and paranormal with a sprinkling of chick lit and horror.

Trevor, Ashley’s slimy boyfriend, had been trying to get me out of the picture for months so that he could move into the apartment. Ashley and I agreed the apartment would be just for girls. Boyfriends could stay over, but we would let each other know beforehand so as to not create an uncomfortable situation. Ashley had it bad for Trevor.
