Reviews!

To any authors/publishers/ tour companies that are looking for the reviews that I signed up for please know this is very hard to do. I will be stopping reviews temporarily. My husband passed away February 1st and my new normal is a bit scary right now and I am unable to concentrate on a book to do justice to the book and authors. I will still do spotlight posts if you wish it is just the reviews at this time. I apologize for this, but it isn't fair to you if I signed up to do a review and haven't been able to because I can't concentrate on any books. Thank you for your understanding during this difficult time. I appreciate all of you. Kathleen Kelly April 2nd 2024

Easy as Breeze, Blue Diamond Chocolate Almond Milk With Recipe!

Don't you just love summer?? Warm breezes, lazy vacation days at the beach or just taking a break from a busy schedule. When you do these activities, if you are like me, you want to eat or drink something that is healthy and is good for you. To accomplish this I like to make a variety of drinks and desserts. To keep the recipes, I have started using a variety of healthy ingredients such as Almond Breeze Almond Milk, Chia seeds, flax seeds and fruit.

As you may know, drinking almond milk has the following benefits:

"Almond milk is loaded with essential vitamins, minerals and heart-healthy monounsaturated fats.

While almonds and other nuts are fairly high in calories, almond milk surprising is not -- containing fewer calories than even skim cow's milk. Helps maintain a healthy weight/

Almond milk may help reduce your chronic disease risks, especially when used as part of a calorie-controlled, heart-healthy meal plan.

The following recipe is for a chia pudding using Almond Breeze Chocolate Almond Milk and Chia seeds, along with other natural ingredients.

Chocolate Chia Pudding (serves 2)
1 cup non-dairy milk (I use Almond Breeze chocolate almond milk)
4 tablespoons chia seeds, black or white
1½ tablespoons organic pure cane sugar (or sweetener of choice)
1 teaspoon pure vanilla extract (to give this pudding a more almondy flavor, you can substitute almond extract for the vanilla.

How to make pudding

  1. In a small bowl, combine the milk, sugar, and vanilla extract. Stir until combined. Sprinkle on the chia seeds and stir them in thoroughly.
  2. Pour mixture into a pint jar and refrigerate overnight, or until it reaches the desired thickness, stirring occasionally. I added about a teaspoon of mini chocolate chips! Enjoy!
